About Grimm Tavern

Grimm has been named New York State Brewery of the Year by our state brewer’s association in 2021, 2022, 2024, 2025, and 2026. We set ourselves the goal of being the best brewery in New York, and we got there by caring deeply about the details and holding ourselves to a higher standard of execution than the situation strictly requires. That philosophy runs through everything we do. We are a 100% family-owned business based in Brooklyn, New York.

Under the Grimm umbrella, we also operate Physica Wines (low-intervention, whole-cluster natural wines from North Fork grapes) and Lala’s Brooklyn Apizza (creative, New Haven-inspired, fermentation-driven sourdough pizza).

Targeting a June 2026 opening, Grimm Tavern is our newest venture: a full-service restaurant in Prospect Heights where warm, relaxed hospitality complements refined tavern food alongside our best-in-class beers and wines — think dry-aged steaks and burgers, tallow fries, roast chicken, pan-fried trout. A cozy dining room opens onto an expansive back yard. Next door, Grimm Goods is a small cafe offering coffee, prepared foods, breakfast sandwiches, biscuits, muffalettas, and canned beer to go.

The Role

This is an opening role. You'll help shape Grimm Tavern from day one: service standards, hiring philosophy, the small habits that become the culture. Once a restaurant has been open for a year, those things are nearly impossible to change. You'll set them.

The GM partners closely with our executive chef Greg Massaro — who leads the kitchen and culinary program across our concepts — and reports directly to the Grimms.

Strong performance in this role will lead to opportunities for growth within the Grimm family of brands.

Outcomes

A successful GM will, within their first year:

  • Build a guest experience that earns repeat visits and word of mouth — the kind of place regulars treat as their living room and visitors talk about when they get home.
  • Deliver strong financial performance: hit labor and beverage cost targets, partner with the chef on overall P&L, and grow revenue through smart programming and operations.
  • Build and retain a team people don’t want to leave — low turnover, internal promotions, and a culture that’s calm under pressure.
  • Run an establishment that is low-drama while executing to a high standard: consistent service, clean operations, no fire drills.
  • Carry the Grimm, Physica, and Lala’s brand integrity into every guest interaction, every staff hire, and every operational decision.

Responsibilities

  • Own the FOH P&L: hit labor and beverage cost targets, manage scheduling to demand, and partner with the chef on overall restaurant financial performance.
  • Lead hiring, onboarding, and ongoing development of the front-of-house team — servers, bartenders, hosts, and concierge roles. Build the bench.
  • Oversee daily operations across the dining room, bar, and back yard; ensure cleanliness, organization, and a consistently warm, gracious service experience.
  • Drive beverage program execution in partnership with ownership: train staff on Grimm beers, Physica wines, and the broader list; maintain a sharp, well-curated cellar.
  • Manage cash controls and financial workflows, including weekly bank deposits, safe reconciliation, and reporting.
  • Own operational systems and vendor relationships — POS, reservations, third-party ordering platforms, suppliers — and resolve issues quickly when they arise.
  • Maintain compliance with local, state, and federal regulations as well as Grimm’s house standards.
  • Be the face of hospitality on the floor: greet guests, anticipate needs, handle concerns gracefully, and model the standard of service for the team.

Requirements

  • Minimum 3 years of FOH leadership experience in an established restaurant.
  • Proven track record of strong financial and operational results.
  • Strong knowledge of craft beer; literacy in (or active curiosity about) natural wine.
  • Strong computer skills (Google Workspace, Slack, POS systems, scheduling software).
  • Analytical skills and a working understanding of restaurant business management — labor, COGS, P&L.
  • Excellent leadership, communication, and organizational skills.
  • Interest in nourishing, healthful everyday food with a focus on fermentation.
  • Comfort working in a fast-paced restaurant environment with occasional physical demands (long shifts on your feet; lifting kegs and supplies; brief work in our walk-in cold box).

Schedule & Compensation

  • $90,000–$110,000/year, depending on experience.
  • Schedule includes days, nights, weekends, and holidays as required.
